Uncured bacon is usually just bacon that hasn’t been preserved with salt and sugar. Cured bacon is generally what you see in most grocery stores. Take a look at the labels on different types of bacon sometime. There are different ways for curing it too.

Bacon has plenty of good fat in it. If you can find uncured bacon without all the salt and other junk in it, even better.
